BENEFITS OF THE VACUUM DRAWER
The Barazza vacuum drawer offers three different vacuum levels, allowing you to choose between bag or container preservation (container available separately):
• minimum: for packaging delicate products sensitive to pressure such as strawberries, berries, salads, and items prone to loss of volume like mousses, whipped cream and fresh cheeses;
• medium: for preserving raw or cooked products sensitive to pressure such as fish fillets, whole shellfish, tomatoes, sauces or soups;
• maximum: for preserving raw or cooked products that are not delicate such as potatoes, carrots, meat, mature cheeses or products immersed in liquid like vegetables in oil. At maximum power the drawer removes over 99% of air, a value comparable to professional equipment.
It can also perform sealing only on plastic bags for delicate products, with three selectable sealing levels:
• Level 1: thin bags, including non‑vacuum bags;
• Level 2: vacuum bags for storage;
• Level 3: vacuum bags for cooking and storage.
CHEF FUNCTION:
The appliance features the exclusive Chef mode which, by exploiting the vacuum created inside the chamber, can perform various functions such as meat massaging, cold infusions, extraction of essential oils and marinating. Working under vacuum—without air and pressure—accelerates these processes exponentially; for example, vacuum marinating can achieve in about ten minutes the same liquid penetration you would obtain with 48 hours of traditional marinating.
